In the present work extraction of Amaranth was carried out at pressures and temperatures ranging from 100 bar to 300 bar and 35 °C to 50 °C, respectively. The effects of flow rate and sample pre-treatment were also investigated. Results are presented in terms of the % by mass of extract as function of the mass of CO 2 used.
